What type of cookie is great for breakfast, a healthy snack, or an evening treat?

GLUTEN FREE GRANOLA COOKIE

INGREDIENTS:

1 cup gluten free oats

1/2 cup ground flax meal

1/2 cup almond flour

1/2 cup sunflower seeds

1/2 cup raisins

1/2 cup hemp seeds

1.5 TBSP chia seeds

1 TSP baking powder

1 TSP cinnamon

½ cup melted coconut oil

½ cup honey

½ TSP vanilla extract

1 egg

    INSTRUCTIONS:

  •  In a large bowl combine oats, flax meal, almond flour, sunflower seeds, raisins, hemp seeds, chia seed, baking powder and cinnamon.  Mix well.

  • In another bowl, combine melted coconut oil, honey and vanilla extract and egg.

  • COMBINE THE dry ingredients WITH THE wet ingredients and continue to mix well until a batter forms.

  • Form 2 inch balls with a scoop onto a parchment tray.

  • Press each ball to form a flat 2 ½ inch circle

  • Bake at 350 degrees for 15 minutes. Makes 12 pcs

Tips and Variations:

Add more honey for sweetness.

Drizzle with chocolate.

Add chocolate chips

Substitute coconut flour instead almond flour
