GLUTEN FREE GRANOLA COOKIE
INGREDIENTS:
1 cup gluten free oats
1/2 cup ground flax meal
1/2 cup almond flour
1/2 cup sunflower seeds
1/2 cup raisins
1/2 cup hemp seeds
1.5 TBSP chia seeds
1 TSP baking powder
1 TSP cinnamon
½ cup melted coconut oil
½ cup honey
½ TSP vanilla extract
1 egg
INSTRUCTIONS:
In a large bowl combine oats, flax meal, almond flour, sunflower seeds, raisins, hemp seeds, chia seed, baking powder and cinnamon. Mix well.
In another bowl, combine melted coconut oil, honey and vanilla extract and egg.
COMBINE THE dry ingredients WITH THE wet ingredients and continue to mix well until a batter forms.
Form 2 inch balls with a scoop onto a parchment tray.
Press each ball to form a flat 2 ½ inch circle
Bake at 350 degrees for 15 minutes. Makes 12 pcs
